Why is Gujarati daal sweet?

It’s not a misconception that there is something called sweet daal in Gujarat, but it is erroneous to say that Gujarati cuisine is sweet.

Gujarat is a coastal desert. As it is an arid region, it receives many heat strokes in summer. Now, we have technology and development to protect us from those heat strokes. But in the past, they had no other option than ORS (Oral Rehydration Solution).

So, whenever someone enters the house, they were given water and jaggery to revitalize their body. Following this, they started putting jaggery into daal and some curries as well. This process helped them in maintaining their sugar level against the hot temperature of Gujarat.

However, apart from this reason, people like to believe that the process of adding jaggery in the food started because the water of Gujarat has a great amount of salt in it.
